Chicken prices can vary quite a bit from week to week, depending on sales. Safeway currently has chicken breasts on sale for $1.88 per pound which is what I based my pricing on for this week’s budget meal. The chicken and sauce price came in at approximately $6.00 and since broccoli was on sale for […]
Lemony Chicken Piccata – Serves 4 for About $6.50 (Quick, Easy & Gluten Free)
I love this chicken piccata recipe so much, it has become a “go-to” favorite that my husband and I cook on a regular basis. Not only is it easy enough for a beginner cook, it’s also inexpensive, quick and so delicious, it’s a perfect choice for when you have company over. You can buy chicken […]
Spicy 4-Bean Crock Pot Chili – $10 or Less Meal
Some people like meat in their chili, some prefer just beans and then there are some, like my husband and me, who likes both meat and beans. But we’ve been trying to eat less meat lately so I made up a batch using 4 different types of canned beans we had in the pantry and […]

Cream Of Broccoli Soup – About A Buck A Bowl & Only 85 Calories Per Cup
A simmering pot of hearty soup can be inexpensive, delicious, filling, nutritious, and a great meal choice for cool evenings. Not to mention the wonderful aroma that wafts through the house as the soup simmers. I personally enjoy cream-based soups, especially in the winter months, but they can be loaded with more calories and fat than you […]
Stout, Beef, and Cabbage Stir-Fry….Perfect For St. Patrick’s Day & $10 Or Less Meal
I was hunting for a new recipe to try for St. Patrick’s Day but I didn’t want the usual corned beef and cabbage meal. I saw this recipe in Better Homes and Gardens (March 2013) and it sounded St. Patrickish, looked delicious, cooked in 30 minutes and I thought I could get it in as a $10 […]
Barbecue Chicken, Corn Salad & Stuffed Potatoes – $10 or Less Meal
This would also make a great meal for your Labor Day cookout. To keep the costs down, we used chicken thighs and legs, which are actually juicier than the breast.
Homemade Calzones & Carrot Ribbon Salad ($10 or Less Meal)
One of our most popular recipes has been our homemade pizza and sauce so I thought, why not use the dough and sauce and come up with something just as tasty (and cheap) but different. So today’s recipe is homemade calzones, which I stuffed with hamburger, peppers, onion, mushroom and olives but of course, just as with the pizza, you can add any fillers your family likes or whatever leftovers you have in the fridge. And because this is a kid-friendly, but good enough for adults dish, I paired it with a carrot ribbon salad I just saw in one of my favorite magazines.
