Chicken legs (and thighs) are on sale right now at Albertsons for 99 cents a pound, which makes for an inexpensive meal. We’re going to doctor them up with a spicy but sweet sauce that’s so good! When I was young, my mom made Rice A Roni salad for summer meals and since Rice A Roni is on sale for 50 cents a box at Albertsons, I thought that would make for a nice side dish. We’re cooking the chicken in the oven since not everyone has a grill but feel free to grill them outside if you own one. This makes a great summer meal, which feeds a family of 4 for $9.89.

OVEN BARBECUED CHICKEN LEGS –

Prep Time: 5 minutes        Cook Time: 1 hour     Serves: 4 for approx. $5.20

Ingredients:

8 chicken legs

1 1/2 tablespoons olive oil

1/2 cup soy sauce

1 1/2 tablespoons ketchup

1/4 cup honey

1/4 cup hoisin sauce

2 cloves garlic, chopped

1 small jalapeno, chopped (optional)

salt & pepper

Directions:

Preheat oven to 350 degrees. Spray a 9 x 13 baking dish with cooking spray. Mix olive oil, soy sauce, ketchup, honey, hoisin sauce, garlic and jalapeno together. Add salt and pepper to taste. Place chicken in baking dish and pour sauce over it. Bake approximately 1 hour until chicken is cooked through and sauce has caramelized.

 

RICE A RONI SALAD –

Prep Time: 15 minutes      Cook Time: 20 minutes        Serves: 6 for approx. $4.69

Ingredients:

1 box chicken Rice A Roni

2 green onions, chopped

1/3 cup green bell pepper, chopped

1/2 cup celery, chopped

1 6.5 ounce jar marinated artichoke hearts, chopped (keep the liquid)

2 tablespoon mayonnaise

1/3 cup green olives, with pimento, sliced

4 ounce can (half of an 8 ounce can) water chestnuts, sliced

dash of worcestershire sauce

Directions:

Cook rice according to directions, omitting the butter. Put rice in fridge to chill. Drain artichoke hearts, reserving juice. Combine juice with mayonnaise and mix well. In a large bowl, add chilled rice and the rest of the ingredients. Pour mayonnaise mixture over it and stir. Serve chilled.
