I’m not a mixed drink kind of girl, but these Shimmering Shamrock and Lucky Leprechaun drinks were delicious! Perfect for any entertaining you might do this holiday weekend (or anytime!) I bought all the glasses we used for the drinks at the Dollar Tree. The Irish Coffee drink is so good…I had to take many sips and keep adding whip cream for picture-taking purposes!
SHIMMERING SHAMROCK –
Ingredients:
- 1 kiwi, peeled
- 1/2 oz lime juice
- 1 tsp. agave nectar
- 1 oz vodka
- sparkling wine or Prosecco
- lime slice
Directions:
Muddle kiwi in a glass with a spoon or muddler. Fill cocktail shaker halfway with ice. Add muddled kiwi, lime, agave and vodka; shake well. Strain into champagne flute. Add sparking wine or Prosecco on top, to taste. Garnish with lime slice.
LUCKY LEPRECHAUN –
Ingredients:
- cinnamon sugar (you can make this yourself by mixing equal parts cinnamon and sugar together)
- cocoa powder
- 1 oz chocolate vodka
- 1 oz triple sec
- 1 oz coconut milk
- 1/2 oz green creme de menthe
Directions:
Rim a glass with cinnamon sugar and cocoa powder. Fill cocktail shaker with ice; add vodka, triple sec, coconut milk, and creme de menthe. Shake well. Strain into glass.
IRISH COFFEE –
Ingredients:
- 1 oz Baileys Irish Cream
- 2 oz whiskey
- 4 oz hot coffee
- splash of milk
- whip cream
- cinnamon
Directions:
Add all the ingredients (except for whip cream and cinnamon) in a cocktail shaker. Shake well and pour into mugs or coffee glasses. Top with whip cream and sprinkle cinnamon on top.
