I have tried so many cauliflower pizza and bread recipes over the years which were all good but weren’t necessarily something I was in a rush to make again. I recently found this recipe for Cheesy Cauliflower Breadsticks, decided to give it a try, and in my personal opinion, it is the best I’ve made and I’ll make it again. In fact I will make this for our Super Bowl party which will make for a nice gluten free, low carb option. This tastes great dunked in marinara sauce.

CHEESY CAULIFLOWER BREADSTICKS 

Prep time: 10 minutes           Cook time: 40 minutes         Serves: 8

Ingredients: 

4 cups riced cauliflower, about 1 large head cauliflower

4 eggs

2 cups mozzarella or Tex Mex blend

3 teaspoons oregano

4 cloves garlic, minced

salt and pepper to taste

1 cup mozzarella 

Directions: 

Preheat oven to 425 degrees. Prepare 2 pizza dishes or large baking sheet with parchment paper.

Make sure your cauliflower is roughly chopped in florets. Add the florets to = food processor and pulse until cauliflower resembles rice.

Place cauliflower in microwavable container and cover with lid. Microwave 10 minutes. Let cauliflower cool just until no more steam is coming from it. Place microwaved cauliflower in a large bowl and add the eggs, 2 cups mozzarella or Tex Mex blend, oregano, garlic, salt and pepper. Mix everything together.

Separate mixture into 2 and place each half onto the prepared baking shoots and shape into either pizza crust or rectangular shape for breadsticks.

Bake the crust for about 25 minutes or until nice and golden. Don’t be afraid the crust is not soggy at all. Once golden, sprinkle with remaining mozzarella and put back in the oven for another 5 minutes or until cheese has melted.

Slice and serve.
