Irish Bread Pudding Recipe & Irish Coffee (Perfect For St. Paddy’s Day) – Serves 12 for $10.92

This Irish Bread Pudding is perfect for serving on St. Patrick’s Day and it’s so easy, even a “non-baker” like me can whip it together. This makes enough for 12 servings which is perfect for a large celebration, or lots of leftovers.

Occasionally I’ll have someone ask me where I found my grocery items and how much they cost. Because we film ahead of time, my sale prices don’t always match up with what’s on sale the week we air our video but, they are items typically on sale at least once a month. I don’t use coupons since not everyone does. I do my shopping at Albertsons, King Soopers and Safeway. Sometimes, I’ll get items at the Dollar Tree too. For this recipe; a dozen eggs and a gallon of milk were on sale for $1.99 at Albertsons. I bought the store brand of bread at King Soopers for 99 cents. You can also save money by buying day old bread. I bought my raisins, evaporated milk, cinnamon and vanilla extract at the Dollar Tree. If you buy your Irish Whiskey at a larger discount liquor store, you’ll save at least a dollar or two versus buying at a smaller store but check the ads. And remember, Wal-Mart will match sale prices if you want to do all your shopping in one place.

IRISH BREAD PUDDING –

Prep Time: 10 minutes

Cook Time: 30-35 minutes

Serves: 12 for approx. $10.92

Ingredients:

  • 6 eggs
  • 1 14 ounce can sweet condensed milk
  • 1 12 ounce can evaporated milk
  • 1 3/4 cup milk
  • 1 cup sugar
  • 3/4 cup raisins
  • 3/4 cup Irish Whiskey
  • 2 tablespoons vanilla extract
  • 1 tablespoon cinnamon
  • 1 loaf bread, cubed and lightly toasted

Directions:

PreheatĀ oven to 350 degrees. In a large bowl, combine the first 9 ingredients and mix well. Add bread cubes and toss thoroughly. Pour into a well-greased/buttered 13-inch x 9-inch baking pan. Bake for 30 to 35 minutes.

Here’s an easy recipe to make Irish Coffee, perfect for St. Patrick’s Day or really, any day! Baily’s Irish Cream is a popular brand of Irish Cream but I usually use Saint Brendans, which is quite a bit less. I personally can’t tell the difference, especially when mixed with other ingredients but use what you like.

IRISH COFFEE –

Makes 1 serving

Ingredients:

  • 2 ounces Irish Cream liqueur
  • 6 ounces hot coffee
  • 1 ounce Irish Whiskey
  • dollop of whipped cream
  • dash of cinnamon

Directions:

Combine Irish Cream liqueur, coffee and whiskey in a tall “Irish Coffee” glass. Top with a dollop of whipped cream and a dash of cinnamon.

*If using a smaller glass, just cut the recipe in half… or just add less coffee! ; )
