Saint Patrick’s Day is the perfect time to mix up one of these fabulous drinks. Of course you can enjoy them any time!
I use Carolans Irish Cream and Jameson Irish Whiskey because they are safe for someone with celiac disease (gluten intolerance,) but feel free to use your favorite brands.
Have fun this St. Paddy’s Day and remember to drink (and entertain) responsibly.
IRISH COFFEE
Makes 1 large serving
Ingredients:
2 ounces Irish Cream
6 ounces hot coffee
1 ounce Irish Whiskey
Optional garnish ideas – whip cream, shaved chocolate, green sugar, or cinnamon
Directions:
Combine Irish Cream, coffee, and Irish Whiskey in a tall coffee glass. Top with whipped cream if desired. For added fun, sprinkle with shaved chocolate, green sugar, or cinnamon.

IRISH MINT MOJITO
Makes 2 servings
Ingredients:
1/2 cup sugar
1/2 cup water
1/4 cup mint leaves
4 lime wedges
4 ounces Irish Whiskey
crushed ice
splash of tonic water or ginger ale
lime wedges and/or mint for garnish
Directions:
For the simple sauce; Combine water and sugar in a saucepan over medium heat. Bring mixture to a boil and let it simmer until sugar dissolves and the mixture thickens. Remove from heat and cool completely.
Place mint leaves in a cocktail shaker along with lime wedges and syrup; muddle leaves with a wooden spoon. Add Irish Whiskey and fill the shaker with ice. Shake vigorously for 30 seconds and pour into prepared glasses (of ice.) Top with a splash of tonic water or ginger ale. Serve with additional lime wedges and fresh mint leaves if desired.
