This grilled gruyere cheese sandwich is perfect for a quick lunch or dinner, but when cut into quarters, it’s perfect for a light snack when friends or family pop over for a visit. Spreading a thin layer of mayo on the outer sides creates a golden layer of deliciousness.
GRILLED GRUYERE CHEESE WITH THYME MAYONNAISE

INGREDIENTS:
2 slices sourdough bread
2 tablespoons mayonnaise
1 tablespoon unsalted butter
2 ounces grated gruyere cheese
fresh ground pepper
1 to 2 teaspoons chopped fresh thyme
DIRECTIONS:
Mix 1 to 2 teaspoons of chopped fresh thyme with mayonnaise. Spread 1 tablespoon of mayo on top of each piece of bread.
Warm a skillet or griddle over medium heat. Add half of the 1 tablespoon of butter to pan. Once the butter is melted, place 1 slice of bread, mayo side down, in skillet and top with cheese. Season with pepper.
Top with second slice of bread, mayonnaise side up. When the underside is golden brown, about 4 minutes, flip sandwich and add butter. Press down slightly with a spatula to help cheese melt and help even browning. Cook till second side is golden brown and the cheese is melted.
Slice and serve.
- You can of course use any bread and cheese of your choosing. Have fun and experiment. If you don’t like thyme, skip it and just use plain mayonnaise.
