This yummy “pizza” uses homemade pimento cheese as the sauce, which is easy to whip up in less than 10 minutes. You can serve this as an appetizer or add a salad and serve it for a quick and filling lunch or dinner.
HOMEMADE PIMENTO CHEESE & PEPPERONI BAGUETTE PIZZA

INGREDIENTS:
2 ounces cream cheese, at room temperature
3 tablespoons mayonnaise
1/4 teaspoon onion powder
1/8 teaspoon cayenne pepper
Kosher salt and fresh ground pepper
4 ounces extra-sharp Cheddar cheese, grated
2 ounces drained diced pimentos (half of a 4-ounce jar)
1 baguette or French bread
3 ounces sliced pepperoni
2 cups shredded mozzarella cheese
2 tablespoons fresh parsley, finely chopped
Grated parmesan cheese, for topping
DIRECTIONS:
Preheat oven to 450 degrees. line a baking sheet with parchment paper or foil.
Mix the cream cheese, mayonnaise, onion powder, cayenne pepper and a small pinch of salt and pepper in a medium bowl. Stir in the cheddar and pimentos until well combined. Season with more salt and pepper as desired.
Halve the baguette or French bread loaf lengthwise. Spread the pimento cheese on the cut side of each piece, spreading it to the edge. Arrange on the baking sheet and top with the pepperoni, then the mozzarella.
Bake for about 12 minutes or until the bread is toasted around the edges and the cheese is melted. Let cool slightly. Sprinkle with the parsley and parmesan. Cut into desired size of pieces.
*For pricing purposes…I found my ingredients at Safeway with the cream cheese being on sale for $1.66, the cheddar and mozzarella 8-ounce bags for $1.77 and the pepperoni for $3.49 for a 6 ounce bag.
