From start to finish this creamy, savory with just a hint of sweetness pumpkin hummus takes less than 15 minutes to make. For 3 cups this recipe cost me $4.25 to make, with all my ingredients coming from Walmart. And even better? It is delicious!
This pairs well with pita chips, pears and apples.
CREAMY PUMPKIN HUMMUS
Total time: 10 to 15 minutes Makes: 3 cups for approx. $4.25
INGREDIENTS –
1- 15 oz can chickpeas (garbanzo) rinsed and drained
1 cup canned pumpkin
1/3 cup tahini
1/4 cup olive oil
3 tablespoons toasted sesame oil
1 teaspoon ground cumin
1 teaspoon minced garlic
1/4 teaspoon Kosher salt
Optional
1/4 cup salted pumpkin seed kernels or pepitas
1/4 cup pomegranate seeds or cried cranberries
2 tablespoons olive oil
DIRECTIONS –
Place the chickpeas, canned pumpkin, tahini, olive oil, orange juice, toasted sesame oil, ground cumin, minced garlic and salt in a food processor and blend until smooth.
Put hummus in bowl or on a platter and if desired, drizzle olive oil over the hummus and garnish with pumpkin seeds and pomegranate seeds.
I have personally used chopped nuts and cranberries as topping options. Experiment with your favorite hummus topping.
