This quick and easy cucumber salad is creamy, with a little bit of tang, and is super refreshing. I serve this as an appetizer or side salad and there are never any leftovers.
CUCUMBER & DILL SALAD
Prep Time: 10 minutes Total Time: 10 minutes Serves: 4 as a side salad for approx. $2.50
INGREDIENTS –
12 ounces cucumber, sliced into 1/4-inch-thick cucumber, about 2 cups – I prefer mini or English cucumbers for this dish
1 teaspoon Kosher salt, plus more to taste
1 teaspoon sugar
1 shallot, halved and thinly sliced
2 teaspoons white wine vinegar
1/3 cup sour cream
1 tablespoon chopped fresh dill, plus more for garnish
1/4 teaspoon black pepper, plus more for garnish
DIRECTIONS –
In a medium bowl, toss together the cucumber slices and salt and sugar. Set aside and let stand 10 minutes. In a small bowl, stir together the shallot and white wine vinegar; let stand 10 minutes.
Add sour cream, dill, black pepper and shallot mixture to bowl with cucumbers. Stir until well combined. Season with additional salt to taste. Transfer cucumbers to serving dish and garnish with additional dill and black pepper.
