MARRY ME GNOCCHI

The sauce in this recipe is rich and creamy with depth, a bit of tang and so aromatic. It’s a miracle sauce that’s super easy and versatile. I’m using gnocchi but the sauce would taste delicious with baked chicken, shrimp or salmon. I’m not a huge fan of sun-dried tomatoes but this recipe has completely changed my mind on that.

                                                                                        MARRY ME GNOCCHI

                                                       Prep Time: 10 minutes            Cook Time: 10 minutes      Serves: 4 for approx. $11.60

INGREDIENTS –

1 7-oz jar sun dried tomatoes in oil, tomatoes chopped and oil reserved. DO NOT TOSS THE OIL!

4 garlic cloves, finely chopped

2 tablespoons tomato paste

1/4 teaspoon crushed red pepper flakes

2 cups chicken broth

1 cup heavy cream

1/2 cup shredded parmesan cheese

fresh basil leaves, torn

fresh thyme leaves, about 1 tablespoon

Kosher salt and freshly ground black pepper

1 17-oz package dry gnocchi *some gnocchi packs are 16 ounces which is fine

DIRECTIONS –

In a large skillet over medium heat, heat 2 tablespoons of reserved tomato oil. Add the garlic, tomato paste and red pepper flakes and cook, stirring, until tomato paste deepens in color, about 1 minute.

Add sun-dried tomatoes, broth and cream. Bring to a simmer, scraping up any browned bits and cook, stirring occasionally, until sauce slightly reduces, about 5 minutes. Add basil and thyme. Season to taste with Kosher salt and fresh ground black pepper.

Meanwhile, cook gnocchi in boiling water until they pop to the top. Drain gnocchi and add to sauce, stirring sauce over gnocchi. Let simmer for a couple of minutes. 

Top with shredded parmesan cheese if desire and more fresh basil and thyme.
