Chicken Piccata with Angel Hair Pasta ($10 or Less Meal)

This is a great, easy chicken dish that you can cook in 15 minutes and takes about 10 minutes to prep. I picked up fresh spinach that was on sale and just made a bed of the fresh spinach, then laid angel hair pasta over that and placed the chicken piccata over the pasta and drizzled the yummy sauce over it. It is delicious!

Chipotle Chicken Tacos With Tex-Mex Rice – $10 Or Less Meal

I bought a whole chicken (on sale for 79 cents a pound) and cooked it the day before in my slow cooker, which makes it really easy to shred.You can quick up the heat a bit by adding an extra chipotle chile if you want. You can find canned chipotle chiles in adobo sauce in the Mexican food aisle at most grocery stores.

Pork Chops With Pineapple-Mango Salsa, Spicy Grilled Corn and Salt-Crusted Baked Potatoes-($10 or Less Meal)

This is a super easy dinner…quick enough for a hectic week-night, or for when you have guests over for a laid-back barbecue. I cook the potatoes (in the microwave) and boil the corn on the cob, then finish them off on the grill for some extra flavor. Make your salsa and corn sauce before you cook the chops, have your potatoes and corn cooked and ready to add to the grill and everything will be finished at the same time. Then entire meal came in at around $7.00 (the chops, mango, potatoes, corn and cilantro were on sale).
