Cooking At The Cliff House at Pikes Peak…Today On KKTV 11 News – Potato Galette (Easy & Delicious)

There’s so many things I like about this recipe! Not only is it delicious, fairly inexpensive, easy to make since Chef Boudouin (Executive Chef at The Cliff House at Pikes Peak,) mixes all the ingredients up instead of the time-consuming layers, but you can also make it ahead of time and/or freeze. Potato Galette isn’t just for […]

Today On KKTV…Making A Vanilla Bean Cheesecake at The Cliff House at Pikes Peak

Cheesecake is one of my very favorite desserts to eat but I haven’t made it in years. It’s not an especially difficult dessert to make but every recipe I’ve ever read uses a springform pan and while I own one, I don’t have particularly good luck with it. Seems kind of silly maybe but that’s really the only reason I stopped making them.

Sweet Potato Souffle…Today On KKTV At The Cliff House with Chef Boudouin

I had  never made a soufflé. I think the reason I’ve never attempted one wasn’t due to the chances it could “fall” but rather because I didn’t have a soufflé pan! Well, know that I know that some of my casserole dishes and even ramekins will work, I’ll be trying my hand at making a variety […]

Mango and Avocado Salad with Tuna Cakes

Mangoes are on sale right now for $1.00 each and because I’m still in a tropical state of mind, having just got back from Hawaii, I’m taking advantage of this sale; regardless of the snow and below zero (with the wind chill factor) temperature outside! We ate a lot of crab cakes on the island […]

Fish Chowder

Here’s a hearty chowder that tastes great no matter what the weather’s like outside. Because of what’s on sale right now I use canned corn instead of fresh and tilapia as my fish. You can use whatever white fish you like. If you want to spend a bit more, you could add some shrimp to […]

Fish Tacos With Lime Aioli, Black Beans & Rice, And A Side Of Mango

My husband and I just got back from Hawaii and while we were there, I think I ate fish tacos at least 5 times at different restaurants. And while they were good, my husband said my fish tacos were better in most cases (and they are a heck of a lot cheaper!) I made this […]

Today On KKTV 11 News…Cooking Chicken Cordon Bleu at The Cliff House at Pikes Peak

I know so many friends who order Chicken Cordon Bleu when we go out to dinner who have never tried cooking it themselves because they think it’s too hard or complicated. Executive Chef Justin Boudouin cooks this up in less than 30 minutes with easy and fairly inexpensive ingredients, taking chicken to a “gourmet” level.

Chipotle Chili Beef Tacos With Rice & Corn – $10 or Less Meal

I can get in a rut sometimes when trying to figure out what I want to cook for dinner. Ground beef tacos are one of my “go-to” quick meals but I make them the same way all the time. Instead of using packaged taco seasoning, I decided to try something different and used chipotle chilies in adobo sauce and they were delicious and different.

Rigatoni With Mushroom Sauce & Romaine, Red Onion & Orange Salad – $10 or Less Meal

Here’s a meatless meal that’s hearty, easy, and delicious. I did try the mushroom sauce using just fresh button mushrooms and then tried it with dried mushrooms mixed with the fresh, and it really did make a difference.

Linguine With Clams – $10 or Less Meal for 4

Until I made this, I assumed it would be difficult or that I’d have to use fresh clams, which can be difficult to find in some areas and expensive. This recipe uses canned clams and is so super easy, and delicious.

Today on KKTV – Making A Basic (And SO Delicious) Aioli with Chef Boudouin at The Cliff House

I’ve made aioli before but it was more like a “mock” aioli since I used store-bought mayonnaise. After tasting Chef’s Basic Aioli, I will never use my old recipes again.
