This baked salmon with a pecan-crunch topping is super simple but elegant enough for any special occasion. This would be a perfect meal to serve mom on Mother’s Day, when you have company over you want to impress or just any night of the week for the family. Takes less than 30 minutes from start to finish and will feed 4 for approximately $15 to $20. I bought my salmon on sale for $7.99 a pound, which was an excellent price.
PECAN -CRUNCH BAKED SALMON
Prep Time: 5 minutes Cook: 15 minutes Serves: 4 for approximately $15.00
INGREDIENTS:
4 salmon fillets (1 1/2 pounds if serving a 6-ounce portion)
1/4 teaspoon salt
1/8 teaspoon pepper
2 tablespoons Dijon mustard
2 tablespoons butter, melted
1 1/2 tablespoons honey
1/4 cup breadcrumbs
1/4 cup finely chopped pecans
1 tablespoon chopped fresh parsley
lemon slices for garnish
DIRECTIONS:
Sprinkle salmon with salt and pepper. Place, skin side down in a lightly greased baking dish.
In a small bowl, combine the mustard, melted butter, and honey. Brush over salmon. In another bowl, combine the breadcrumbs, pecans, and parsley. Spoon evenly across top of salmon.
Bake, uncovered at 450 degrees for about 15 minutes or until fish flakes easily with a fork. Garnish with lemon slices if desired.
