This pineapple mojito recipe is what I call a “cheater’s” drink because instead of making it from scratch, I use a pre-made mojito mix. I’m not a professional when it comes to making drinks so no judgement from you pros. This is a quick and easy recipe that can be made in minutes and doesn’t require any special bar tools. I also use canned pineapple in this recipe but when fresh pineapples are on sale, I use fresh.
I’ve included my own recipe using pre-made mix and canned pineapple, which came in at approximately $1.70 per serving and my favorite homemade version from allrecipes.com, using fresh pineapple, which came in at approximately $2.50 per serving. The pineapple was priced at $2.99 each.
Both versions are delicious! For a slightly smoky flavor, grill the pineapple. Super delicious!
TAMMY’S VERSION OF PINEAPPLE MOJITO –
Using Mr. & Mrs. T Island Mojito Mix and Canned Pineapple

Makes 1 serving for approx. $1.70
INGREDIENTS –
1 slice of canned pineapple, or use fresh
Ice
4 fluid ounces Mr. & Mrs. T Island mojito mix
1.5 ounces rum (I use Bacardi white rum)
5 mint leaves
lime wedge
DIRECTIONS –
Muddle (crush) half of the pineapple slice in a tall, sturdy glass. You can use a muddler or the back of a spoon. Add ice.
Stir in mojito mix and rum.
Garnish with lime, mint leaves, and the other half of pineapple slice.

PINEAPPLE MOJITO
Serves 1 for approx. $2.50
INGREDIENTS –
10 fresh mint leaves, divided
1 tablespoon white sugar
1 tablespoon chopped fresh pineapple
Ice
6 fluid ounces pineapple juice
2 fluid ounces rum
1 splash club soda
1 wedge fresh pineapple
DIRECTIONS –
Muddle mint leaves, sugar, and chopped pineapple in a highball glass.
Fill glass with ice cubes. Pour in pineapple juice and rum. Top with a splash of club soda. Garnish with pineapple wedge and remaining mint leaves.
