Buffalo Chicken Dip – So Good You Won’t Miss the Wings
Buffalo chicken dip has been a hugely popular recipe to serve on Super Bowl Sunday for several years now. You get the great flavor of chicken wings without the mess and if you serve it with healthy options like celery and carrots, you might not feel quite so “guilty.” Last year I made and shared […]

Poultry…To Rinse or Not?
I am a freak when it comes to safely handling raw poultry. I wear disposable gloves, bleach all surfaces the raw poultry might have touched, including spaces a splatter of juice might have reached, and bleach the sink after I pour any raw juices down the drain. I’m also extremely cautious with utensils and […]
Apple-Pumpkin Brown Betty…..So Easy Even I Can Make It!
This is really, really delicious and didn’t take much prep work. And oh my gosh, the house smelled so good as it baked. I think this would be fun to bake in the really small pumpkins too for individual sized portions…more work scooping all the pumpkins but fun for the family or company. I will make for our Thanksgiving dinner too.
Frittata With Spinach, Roasted Red Peppers and Swiss….$10 or Less Meal
I had never made a frittata before and now that I know how easy it is, this will become a staple in our home for a quick, easy and inexpensive meal. You can of course substitute any vegetables or cheese you have on hand to use up leftovers. We completed the meal with twice cooked potatoes with fresh herbs and sausage….all for approximately $5.28….that’s less than $1.50 per person! You could make this for breakfast, lunch, dinner or brunch.
Scary Apple Mouths
So who doesn’t like apples and peanut butter…add some sliced almonds and you have a great snack with protein. These are “scary” apple mouths that the kids (and adults) will enjoy!
Sweet & Spicy Honey Baked Chicken – $10 or Less Meal for 4
Chicken prices can vary quite a bit from week to week, depending on sales. Safeway currently has chicken breasts on sale for $1.88 per pound which is what I based my pricing on for this week’s budget meal. The chicken and sauce price came in at approximately $6.00 and since broccoli was on sale for […]
Real Meatballs & Spaghetti….Simply the BEST Meatballs and Sauce I’ve Ever Had! (Company Worthy & Fairly Inexpensive)
Would you pay thousands of dollars for spaghetti? You would if you ate at the restaurant whose dish this recipe is based on!
Easy Dilled Cucumber Spears
I like cucumbers. During the summer I eat at least one cucumber a day, sometimes I’ll even eat two. They help me stay hydrated, are low in calories which makes them perfect for my mindless munching during the day, and they are inexpensive this time of year. I prefer buying mine at our local farmers […]
Grilled Peach With Goat Cheese, Microgreens & Honey Balsamic Reduction
My husband and I were at a recent event where grilled peaches were served as the salad course. They were delicious. I’ve been grilling peaches for years as a dessert but never thought to turn them into a salad so the next time we grilled some, we put our own spin on a grilled peach salad. […]

Build A Better Salad For Optimal Nutrition (And Save A Bit Of Money)
I have a dear friend who has been trying to eat healthier and exercise more often, and hopefully lose a few pounds in the process. She called me the other day in a frustrated mood because after eating salads for two weeks, she had actually gained weight (and she said it sure wasn’t muscle weight […]
Homemade Peach Pie with Homemade Piecrust…Easy, Delicious & Costs Abouts $8.00
I’m a pretty decent cook if I do say so but desserts have never been something I was good at. And since I’m not a big dessert eater, I guess I just never really tried to master sweets. And I know that if I was baking up yummy dessert recipes on a regular basis, I’d […]
